These healthy pomegranate superfood energy balls are super easy to make and are great snack and source of protein. This is one of the best no-bake energy bites recipes I’ve tried. It’s healthy. My kids love them and can’t pop enough of these energy bites in to their mouths.

Now that we have the morning covered, I wanted share my super easy and super healthy superfood snack with you, Pistachio and Pomegranate Superfood Energy Balls!
If you’re trying to get healthy and lose weight in the new year, these superfood energy balls are a delicious and satisfying snack to tide you over between lunch and dinner. They contain a whopping five superfoods, including pistachio, pomegranate, pumpkin seed, coconut, and chia and flaxseed powder. And the texture of these Pistachio and Pomegranate Superfood Energy Balls is heavenly. The pomegranate seeds give a nice, juicy crunch and the pistachio butter leaves a creamy, chewy texture with a gorgeous sweet, nutty flavour.
I was inspired to make my own nut butter using my food processor, so I tried my hand at pistachio butter. Now I’m not sure if this is something you can buy, but I spent about four hours shelling pistachios and removing their husks to get about 1 cup of beautiful, green pistachios. Now you may ask yourself, “Katrina, are you out of your mind?? Don’t you have anything better to do than shell pistachios for half a day and rip off your fingertips?” The answer is YES and YES. Have you ever been in a situation where you started doing something the hard way, even though you knew there was an easier way to do it? But you couldn’t stop yourself, no matter how futile it was? Well, that was me this week. I later realized that I could have gone to the Bulk Barn to buy hulled pistachios, but they still contain the husk. You could go ahead a grind these too, but since the husk is brown, you won’t get such a vibrant green colour to the pistachio butter.
Now where I failed to use logic with those sneaky pistachios, I successfully outsmarted the pomegranate seeds. You can buy a container of pomegranate seeds, instead of buying a pomegranate fruit and deseeding it. I mean, really, my site is about chic living for BUSY moms. Ain’t nobody got time to crack open a pomegranate….or shell pistachios, for that matter.
Pistachio and Pomegranate Superfood Energy Balls
- 1 cup unsalted, shelled pistachios (remove husks for more vibrant green colour)
- 1/4 cup pomegranate seeds (available in a container)
- 1/4 cup pumpkin seeds
- 1/4 cup + 1 Tbs unsweetened shredded coconut
- 1 heaping Tbs chia and flaxseed powder
- 1 Tbs maple syrup
- 1 tsp vanilla extract
- A pinch of pink himalayan sea salt
- Add pistachios and pinch of pink himalayan sea salt to food processor and mix together, scraping down the sides as you go. (It will take several minutes to turn into a creamy texture, just be patient).
- Once pistachio butter has formed, add pumpkin seeds, 1/4 cup of shredded coconut, chia and flaxseed powder, maple syrup, and vanilla extract. Pulse until pumpkins seeds are finely chopped.
- Divide mixture evenly and roll into balls, pressing pomegranate seeds into each ball.
- Sprinkle shredded coconut over balls and refrigerate for at least 30 minutes before serving (lasts about 5 days in the fridge or longer in the freezer).
Tip: I can get my toddler to eat these nutrient-packed snacks by calling them cookie balls. He loves the crunchy texture of the pomegranate seeds and pointing out the red, green, and white colours.
